Hello there!

The answer to this is True. Although you cannot reverse a cut potato, it's still considered a physical change because its composition of matter remained the same. If you were to, for example, deep-fry the potato, that would already be a chemical change. Because, the potato's composition of matter changed due to the oil that fried it.
